Product Description:
Red yeast rice , red rice koji , red fermented rice, red kojic rice, red koji rice, anka, or ang-kak, is a bright reddish purple fermented rice, which acquires its colour from being cultivated with the mold Monascus purpureus. Red yeast rice is what is referred to, in Japanese, as a koji, meaning 'grain or bean overgrown with a mold culture', a food preparation tradition going back to ca. 300 BC. In both the scientific and popular literature in English that draws principally on Japanese, it is most often known as "red rice koji".English works favoring Chinese sources may prefer the translation "red yeast rice"

FAQ:
1.What is the difference between Red yeast rice and functional Red yeast rice?
Both red koji and functional red koji are obtained from rice fermented by Monascus purpureus. However, the characteristics of the purplish red Aspergillus used by the two differ greatly, and their fermentation processes are also different. The performance of the resulting products varies greatly, and the price of the products varies greatly. The fermentation process of ordinary red koji is relatively simple: rice is steamed, inoculated, and fermented openly in a large pond. After a certain process time and temperature, it can be discharged, and then dried to produce finished red koji rice. The price of the product depends on the color price. Currently, this kind of red koji rice is used as a food colorant in the food industry at home and abroad. Unlike chemical colorants, it is a food additive that has both health benefits and no side effects. Its use is becoming increasingly widespread, and its domestic and foreign consumption is also increasing. The fermentation process of functional red koji is relatively complex: first, the strain must be screened, and must undergo certain conditions of cultivation, domestication, and rejuvenation; Rice needs to be crushed to a certain fineness and sterilized under high temperature and high pressure before being inoculated (the process should also ensure aseptic operation). Then, it is fermented in a small container without opening (there is a high and low temperature control process). After reaching the process fermentation time, it can be discharged, and functional red koji can be obtained after drying.
